Ventilation and air conditioning systems are essential in commercial kitchens because:
- the air is polluted by smells, fat particles and gaseous combustion products
- heat is largely generated by convection and radiation
- moisture occurs during food preparation and washing
- it is necessary to renew the air in the rooms by exchanging it with outside air and keep it comfortable and at a certain temperature.
To fulfill this task, air supply and exhaust systems must be installed in the kitchen areas to remove odors, air pollutants and moisture, avoid damage to rooms that do not form part of the kitchen area and no air that could be considered unsanitary or supplied or can flow back. Special attention should be paid to the separation of fat from waste air.
